Everyone knows about the infamous Costco food court Chicken Bake, but did you know that at Costco food courts in Korea, they sell Bulgogi Bakes? Take a second to let that sink in and here’s a photo of the menu if you don’t believe me. I grew up looking forward to going to Costco with my dad, doing our shopping, then running to the food court to grab our favorite menu items: clam chowder (yes, there was clam chowder), combination pizza, and of course, a bulgogi bake. Honestly I was a bit shocked to learn that there weren’t bulgogi bakes in the U.S. and when a recent pang of homesickness hit me, I decided to take on the challenge and replicate it at home!

These bulgogi bakes are so simple to make and taste almost exactly like the cheesy, savory stuffed bread that I had in Korea. Personally, I prefer these bulgogi bakes to chicken bakes, but you can be the judge of that! I used premade pizza dough that I purchased at Trader Joe’s, but you can also find premade pizza dough at Whole Foods, VONS, and many other grocery stores. You can also be ambitious and make your own pizza dough, but I decided not to do that for this recipe.

The process of making these scrumptious bakes is really very simple. You just roll out your pizza dough into a thin, oval shape then add your cheese and bulgogi before rolling it up and tossing it in the oven. My recipe yields about 4 servings of bulgogi bake, and I’ve tried both making one huge bake, and making three smaller bakes and the results were equally delicious! So the size of your bake is really up to you!

After making these bulgogi bakes, I realized that literally anything can be made into a “bake” and I’m definitely going to be experimenting with that for months to come. Costco Bulgogi Bake

Ingredients

  • 1 lb Thinly sliced ribeye beef
  • 1 lb Premade pizza dough
  • 3 cloves Garlic
  • 1 tbsp Sugar
  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 2 stalks Green onion
  • 2 cups Shredded mozzarella cheese
  • Olive oil

Instructions

  • Preheat oven to 425 F
  • Take pizza dough out of the fridge and rest at room temperature.
  • Add thinly sliced beef to a bowl and add minced garlic, sugar, soy sauce, sesame oil and chopped green onion. Mix and let marinate for at least 10 minutes.
  • Heat a pan over medium high heat and add a touch of olive oil. Add your marinated beef and cook all the way through, about 2-3 minutes. Remove from heat and chop up meat into small pieces and set aside.
  • Separate dough into 3 pieces. Flour your surface and stretch dough out into about 1/4" thick oval shapes. Add a handful of mozzarella to each piece of dough, top with chopped beef then top with a bit more cheese.
  • Starting with the long end, fold over one side of your dough over the ingredients. Fold in the short edges, then tightly wrap over with the remaining long side. Pinch along all the seams to seal.
  • Flip over your bake and brush with some olive oil. Top each bake with a little more cheese. Place your bakes on a baking sheet lined with parchment paper and bake for about 12-15 minutes until top is golden brown. Allow to cool for about 5 minutes and serve while warm.
