Spicy food is the bread and butter of any Korean diet. Today’s dish is a classic Korean spicy pork dish called jeyuk bokkeum (재육볶음.) It is made by simply marinating sliced pork in a spicy marinade with some chopped onions. It only requires a handful of ingredients and doesn’t take much labor to make, so it is naturally a staple in my household!
This pork goes perfectly with a bowl of hot rice and is perfect for preparing in bulk. I like to meal prep with this pork and use any leftovers in fried rice, or even burritos!
Feel free to adjust the amount of Korean red pepper flakes you use to adjust the spice level. My recipe isn’t overly spicy, but if you are shy to spice, you may want to take it down a notch. Give it a try and let me know what you think in the comments down below!
Korean Spicy Pork (Jeyuk Bokkeum)
Ingredients
- 1 lb Pork shoulder
- 1 Small onion
- 1-2 Serrano chillies Optional
- Green onion For garnish
Marinade
- 2.5 tbsp Gochujang Korean fermented red pepper paste
- 1 tsp Doenjang Korean fermented soy bean paste
- 1 1/3 tbsp Korean red chilli flakes Gochugaru
- 3 cloves Garlic Minced
- 3 1/3 tbsp Plum extract Can be substituted with mirim (Korean cooking wine)
- 1.5 tsp Sugar
- 1 tsp Honey
- 1 tsp Sesame oil More for garnish
- 1 tsp Sesame seeds
Instructions
- Thinly slice pork (little thinner than 1/4"), thinly slice onion
- Mix all marinade ingredients in a large bowl and mix thoroughly. Add pork and onion to bowl and mix to combine. Cover and allow to marinate for at least 30 minutes.
- Heat a large pan over medium high heat. Add marinated meat to pan with serrano chillies (if using.) Cook, stirring often for about 4-5 minutes until pork is cooked through. Remove from heat and serve topped with extra sesame seeds, chopped green onion and a bowl of rice!
