Smoked Salmon Salad with Honey Mustard Dill Sauce

Ingredients

  • 4 oz Smoked salmon
  • 1/4 Red onion Thinly sliced
  • 1.4 Cucumber Thinly sliced
  • 2 tbsp Capers
  • 1 Avocado Sliced
  • 4 cups Arugula or spring mix

Honey Mustard Dill Sauce

  • 3 tbsp Dijon mustard
  • 1.5 tbsp Honey
  • 2 tbsp Olive oil
  • 1 tbsp White wine vinegar
  • 1.5 tbsp Dill Chopped. More for garnish

Instructions

  • Wash all vegetables and slice. Add mustard, honey, vinegar, dill to a bowl and whisk to combine. Add olive oil and whisk until smooth. Set aside
  • Add arugula or spring mix to a bowl. Top with red onion, cucumbers, avocado, smoked salmon. Top with capers, extra chopped dill and finish off with honey mustard dill sauce.
