I realized that I don’t have a lot of vegetarian friendly recipes up yet, so I decided to try out a vegetarian burger recipe today! Okay, first of all, it was a huge struggle to take a picture of all the layers of this burger. I ended up having to bite into it and ended up scarfing down the whole burger by the time I finished taking these photos. Point is, this burger is a bit messy, but SUPER DELICIOUS.
Getting back to the dish, I was worried about the patty not being juicy enough so I decided to amp it up by adding a grilled portabello mushroom to the mix! The flavorful mushroom, with the gooey cheese, sautéed onions and my secret sauce makes for a vurger that makes me not miss the meat.
I decided to just keep this dish vegetarian and used smoked cheddar cheese and a brioche bun, but with some simple adjustments this burger could definitely be made vegan! Give it a try and let me know what you think in the comments below!
Beyond Meat Burger with Balsamic Portabello Mushrooms
Ingredients
- 2 Brioche buns You can substitute for an eggless bun to make this dish vegan
- 4 slices Cheese I used smoked cheddar, you can substitute for vegan cheese to make this burger vegan
- 2 Beyond Meat patties
- 2 Portabello mushrooms
- 1 tbsp Balsamic vinegar
- 1/2 tsp Olive oil
- 1/4 tsp Truffle salt
- 2 handfuls Arugula
- 1/2 Onion Diced
- 1/2 tsp Olive oil
Secret Sauce
- 1 tbsp Mayonnaise You can substitute vegan mayo to make this burger vegan
- 1 tbsp Ketchup
- 1 tsp Sriracha
- 1/2 tsp Worcestershire sauce
Instructions
- Remove stem from mushrooms, place in a shallow plate and drizzle with 1/2 tsp olive oil, balsamic vinegar and truffle salt. Allow them to marinate for about 15 minutes, flipping once.
- Mix together sauce ingredients in a small bowl and set aside
- Lightly toast burger buns and set aside tented in foil
- Heat 1/2 tsp olive oil in a small pan over medium heat. Add diced onions and cook, stirring occasionally until onions are soft and browned, about 10 minutes.
- Heat 2 pans coated in olive oil over medium high heat. Add mushrooms cap side up to one pan and Beyond Meat patties to the other.
- Flip mushrooms and patties after 4 minutes. Cook for 2 minutes and then top each patty and mushroom with one cheese slice and allow to finish cooking for 2 minutes. Remove from heat.
- Add sautéed onions to top of each mushroom.
- Spread sauce on top and bottom bun. Place a handful of arugula on each bottom bun. Put patty on top of arugula, then top with mushroom and top bun.
