Volcano Fried Rice (Cheesy Kimchi Fried Rice Recipe)

Kimchi fried rice is one of my most beloved comfort foods that I’ve shared about in not one, but two other recipes on my blog. There are so many different ways you can prepare kimchi fried rice, from adding tobiko (fish eggs,) to using radish kimchi instead of cabbage. Today, I wanted to add another version of this spicy Korean classic to the blog by sharing this cheesy, spicy volcano fried rice recipe with you all! This dish just screams comfort food, doesn’t it? The dish starts off with a base of kimchi fried rice, and is then blanketed in a mixture of creamy eggs and mozzarella cheese. The resulting dish is spicy, smoky, creamy and is truly the perfect blend of flavors.

Cheesy Kimchi Fried Rice

The name “volcano” fried rice gestures at the volcano shape of the rice as well as the gooey egg mixture that is poured over the rice to create the image of lava pouring out of a volcano. This preparation of kimchi fried rice is definitely a way to make a simple dish into a show stopper! It’s amazing how well cheese goes with so many Korean dishes! When eating this dish, I recommend mixing the cheese into the rice before it hardens. If your cheese does harden, simply cover and reheat briefly, or use a blowtorch to soften the cheese.

Volcano Fried Rice (Cheesy Kimchi Fried Rice)

Ingredients

  • 3 Pieces Bacon
  • 2 Cups Cooked white rice
  • 2 Green onion Chopped
  • 1 cup Chopped kimchi
  • 3 Eggs
  • 3/4 cup Shredded mozzarella cheese
  • 1 tbsp Vegetable oil
  • 1 tbsp Soy sauce

Instructions

  • Heat vegetable oil in a pan and add in chopped green onion. Cook until fragrant and slightly browned, about 2 minutes. Add in bacon and cook until bacon is browned, about 3-4 minutes. Add in kimchi and soy sauce and cook until kimchi is reduced, about 4 minutes. Add in cooked rice and toss to mix.
  • Transfer rice into a bowl and invert onto a different pan. Create a well in the middle of the rice as well as an indent for the egg mixture to flow down.
  • Mix together eggs and cheese. Pour egg mixture into well on rice. Cover and heat over medium until cheese is melted and eggs are done to your liking.
