It’s been a while since I’ve put my own spin on a classic Korean dish, so here goes! Here are my beautiful Korean galbi meatballs, inspired by the classic Korean side dish, ddukgalbi. Ddukgalbi is traditionally made using minced short rib meat that shaped into flat pancakes then pan fried to perfection. I decided to make meatballs with a similar, sweet marinade, but using ground pork and ground beef!
These meatballs are sweet, savory and so delicious. They go perfectly with some mashed potatoes and arugula, on a bed of rice, or on a salad! I love meal prepping these meatballs because they are really quick to make and are packed with flavor.

Korean Galbi Meatballs (Ddukgalbi Meatballs)
Ingredients
- 0.4 lb Ground pork
- 0.5 lb Ground beef
- 6 tsp Soy sauce
- 2 tsp Sesame oil
- 1 tsp Sugar
- 1 tsp Honey
- 1 clove Garlic Minced
- 1/4 cup Panko
- 2 tbsp Milk
- 1/4 Onion Chopped finely
- 1/2 Green onion Chopped finely
- 2 tbsp Olive oil
Instructions
- Preheat oven to 425 F. Add 2 tbsp milk to panko and mix, allow to sit for about 10 minutes.
- Heat 1 tbsp oil over medium heat in a small pan. Add onions and cook for 5 minutes until browned and soft.
- Add ground meat, panko, onion, minced garlic, soy sauce, sugar, honey, sesame oil, finely chopped green onion to a bowl and mix. Roll into 8 balls.
- Heat 1 tbsp oil in a cast iron pan. Add balls to pan, brown for about 4 minutes, rotating occasionally. Place pan in oven and cook for 10 minutes. Remove from oven.
- Serve meatballs topped with sesame seeds, extra green onion!
