로모 살타도 (페루 쇠고기 볶음)

페루에서 제일 유명한 음식은 바로 로모 살타도, 쇠고기 등심 볶음 요리입니다~ 토마토와, 양파, 감자 튀김을 넣은 다양한 볶음 요리인데요… 양념에 레드와인 식초가 들어가 있어서 너무 느끼하지 않고 갈끔하니 너무 맛있습니다.

저는 제가 직접 만든 오븐구이 감자 튀김을 넣고 만들어 보았는데요… 시간이 촉박하시면, 냉동 감자튀김을 사용하셔도 됩니다

이 요리에 포인트는 바로 페루 아히 소스 입니다. 양상추와, 마요네즈랑 고추를 넣고 갈아서 만든 소스인데요.. 부드러우면서 끝맛은 매콤한, 중독성 있는 소스 입니다! 한번 만들어보세요~

Lomo Saltado with Ají Sauce

A traditional Peruvian dish made from stir-fried sirloiin steak, tomatoes, onions and fries with a creamy ají sauce.

Ingredients

Ají Sauce

  • 1/2 Head Iceberg Lettuce Ripped into small pieces
  • 2 Cloves garlic
  • 1/2 Lemon Juiced
  • 3/4 Head Cilantro Chopped
  • 1 Whole Jalapeño Seeded and chopped into chunks
  • 1/3 Cup Mayonnaise You can replace this with 1/2 an avocado, or with 1/3 cup olive oil

Oven Baked Fries

  • 2 Yukon Gold Potatoes Cut into 1/2″ matchsticks
  • 2 Tbsp olive oil
  • 1/4 Tsp Paprika
  • 1/4 Tsp Salt
  • 1/4 Tsp Garlic Powder

Lomo Saltado

  • 2 Tablespoons Vegetable oil Or any other mild flavored cooking oil
  • 1 lb Sirloin steak Cut in thin slices
  • 2 Tomatos Cut into wedges
  • 1/2 Red onion Cut in thick slices
  • 2 Tablespoons Soy sauce
  • 3 Tablespoons Red wine vinegar
  • 3 Teaspoons Cumin
  • 1/3 Cup Beef or chicken stock In a crunch you can use water
  • 1/2 Cup Cilantro Chopped
  • 3 Green onions The whole thing, chopped, minus the root
  • Salt and pepper To taste

Instructions

Ají Sauce

  • Place all ingredients in a food processor, or blender, and blend until smooth

Oven Baked Fries

  • Preheat oven to 450
  • Peel potatoes and cut into 1/2″ matchsticks
  • Place cut potatoes in a bowl and submerge in water to remove starch for about 15 minutes
  • Remove water from bowl, take out potatoes and dry them with a paper towel
  • Mix olive oil, paprika, salt and garlic powder in the bowl and mix
  • Put potatoes back in the bowl and mix until well coated.
  • Place potatoes on a baking sheet lined with tin foil and place in oven.
  • Let them bake for 10 minutes and then take out and flip them over.
  • Bake for an additional 10 minutes, then take out of oven. They should be golden brown and crispy. If they don’t look crispy enough for your taste, toss them back in the oven at your own discretion.
  • Set potatoes aside.

Lomo Saltado

  • Mix soy sauce, red wine vingar, cumin, and beef/chicken stock in a small bowl. Set aside.
  • Heat oil in a cast iron skillet, or large pan on high heat.
  • Once pan is very hot, add cut sirloin steak in one layer.
  • Cook steak 1 minute on each side (2 minutes total), and then remove from pan.
  • Add sliced onions to the pan and cook for about 2 minutes
  • Add tomatoes and reserved sauce to the pan. Cook for 1 minute until tomatoes are tender.
  • Add steak back into pan. Salt and pepper to taste.
  • Turn off heat and add french fries to the pan. Toss to coat with sauce.
  • Mix in chopped cilantro and green onion.
  • Serve with a side of white rice, and ají sauce drizzled on top.
